Oat Groats Bread (Rustic)

Ingredients:

2 cups bread flour

1 cup cooked oat groats (cooled)

1 tsp salt

1 tsp sugar

1 tsp yeast

~¾ cup warm water

Instructions:

Activate yeast
Mix yeast + sugar + warm water → 5–10 min

Mix dough
Add flour + salt + cooked groats
→ pour in yeast mix
→ combine into dough

Knead
Knead 8–10 min until smooth (slightly sticky is fine)

First rise
Cover → let rise 1–1.5 hrs (double size)

Shape
Form into loaf or round

Second rise
Rest 30–45 min

Bake
180°C → 30–40 min
→ until golden + sounds hollow when tapped
