Ingredients:
– 1 cup coarse bulgur
– 2 cups boiling water
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1/2 red onion, finely chopped
– 1/2 cup Kalamata olives, sliced
– 1/2 cup crumbled feta cheese
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh mint, chopped
For the dressing:
– 1/4 cup extra-virgin olive oil
– 2 tablespoons red wine vinegar
– 1 clove garlic, minced
– 1 teaspoon dried oregano
– Salt and pepper to taste
Instructions:
- Place the bulgur in a bowl and pour the boiling water over it. Cover and let it sit for about 20 minutes or until the bulgur has absorbed the water and becomes tender.
- Fluff the cooked bulgur with a fork and let it cool to room temperature.
- In a large salad bowl, combine the cooled bulgur, diced cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and mint.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to create the dressing.
- Pour the dressing over the bulgur mixture and toss gently to coat everything evenly.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
